Muscovado sugar recipes
All muscovado is brown sugar, but not all brown sugar is muscovado. Light and dark muscovado sugar is a slightly less refined sugar that adds light caramel or dark, rich toffee flavour to whatever dish it's used in, like Nigella's sticky toffee pudding or Mary's gingerbread pudding cake. Brown sugar, which is refined sugar with added molasses, can generally be substituted for muscovado sugar.

Muscovado sugar is prone to drying out, forming indestructible lumps that defy melting and can leave little lumps in your cake batter. Soften brown sugar in the microwave in a burst of 15-20 seconds. If it is in a large, solid block, wrap it in a damp piece of kitchen paper before microwaving.
