Episode 9: Everything You Need to Know About Wine Corks (and Other Enclosures!) In this conversation, Rabbi Yisroel Bernath and Dr. Kenny Friedman talk about an oft-overlooked aspect of every wine bottle: the enclosure. First, they introduce a new segment as Rabbi Bernath reads a wine label and Kenny is left to guess which bottle it is. They then introduce the main topic, first discussing some of the history of cork and its geographical implications. They discuss each of the enclosures used for wine, including natural cork, synthetic cork, agglomerated cork such as Diam, Vinolok, crowns, and screw caps. They discuss the pros and cons of each enclosure and some of the myths attached. They tackle the issue of TCA, which causes the wine fault of cork taint, and comes from a contaminant inside the cork which can affect over 3% of all wines enclosed by cork. Lastly, they talk about an interesting wine they enjoyed over the last week. Kenny discusses the Binah, Blanc de Blancs, 2021, and Yisroel talks about the Jezreel, Icon, 2018. A: No. Q: Can the greatest fanciest most talented winemaker in the world get Merlot out of a Pineapple? A: No. Q: Why not? A: Because Merlot is made out of grapes. Often we judge our proverbial winemaking skills by our ability to get Merlot out of Pineapples. We judge ourselves unlovable when we pick people who are incapable of loving. We judge ourselves unworthy when we pick redemption projects that are unattainable. We judge ourselves less-than when we pick metrics of achievement that are out of alignment with our real values. I'm really proud of this review from the Wine Advocate. Our vision of making world class wines from the Riverland has taken belief, time, energy, support from many great friends and being a bull in a China shop at times. We named our wine 'Bullets Before Cannonballs' based in a concept in Jim Collins' book Great by Choice. The strategy of firing bullets (low-cost, low-risk, low-distraction experiments) to figure out what will work—calibrating your line of sight by taking small shots. Then, once you have empirical validation, you fire a cannonball (concentrating resources into a big bet) on the calibrated line of sight. Calibrated cannonballs correlate with outsized results; uncalibrated cannonballs correlate with disaster. The ability to turn small proven ideas (bullets) into huge hits (cannonballs) counts more than the sheer amount of pure innovation. At Ricca Terra we continue to fire bullets to calibrate our aim! Over 30 years ago our 'big bet' (our cannonball) was the Riverland. Getting such great feedback from international wine writers, wine shows and our customers suggest our aim was spot on.
