Kalita Wave

The Kalita Wave Dripper is a refined way to brew a single cup of coffee. The small holes and flat bottom of this brewer make it easier to get an even extraction. The scalloped edges of the filter keep your brew bed away from the side of the cone, allowing for better heat retention and helps keep water from bypassing the brew. This recipe makes one 12oz cup of coffee.

Recommended Coffee to Water Ratio: 1:17 (light, delicate)


What you'll need


Prep

  1. Place the Kalita Wave filter in your brewer. Rinse with hot water then discard the water (removes any paper taste and preheats the brewer). 
  2. Grind coffee of your choice on a medium-fine setting (towards the fine side from the center of your grinder). Place the grounds in your filter, tapping or lightly shaking to level the grounds. 
  3. Place your brewer and cup/carafe on a scale, tare to 0.


Brew

1. Start your timer and pour 50g of hot water into the center of the grounds to start the bloom. This recipe calls for three pours, with a heavier first pour, followed by two lighter pours as follows:
  • At :30, pour 140g of water starting in the center of the grounds, slowly circling outward (total weight at this point is 190g)
  • At 1:30, pour 100g more water (total weight 290g)
  • At 2:00, pour remaining 100g (final weight is 390g)
2. Serve coffee once the filter stops dripping, which should happen between 3:30-4 min.
3. Discard the coffee grounds and filter directly into your compost.

Pro Tips
  • Did your brew take longer than 4:00 minutes? Try a coarser grind. Go finer if it was too quick. 
  • Experiment with your water-to-brew ratio. 17:1 is a very light and delicate brew. For stronger coffee, try 16:1.
