Astacin (EC 3.4.24.21, Astacus proteinaza) je enzim.[1][2][3][4] Ovaj enzim katalizuje sledeću hemijsku reakciju
- Hidroliza peptidnih veza u supstratima koji sadrže pet ili više aminokiselina, preferentno sa Ala u P1', i Pro u P2'
Ova endopeptidaza varenja je prisutna u rakovima Astacus fluviatilis.
