Fumaratna hidrataza (EC 4.2.1.2, fumaraza, L-malat hidro-lijaza, (S)-malat hidro-lijaza) je enzim sa sistematskim imenom (S)-malat hidro-lijaza (formira fumarat).[1][2] Ovaj enzim katalizuje sledeću hemijsku reakciju
- (S)-malat fumarat + H2O
