Bihun/ Mihun v.s. Soun

Bihun/ mihun adalah mie berbahan dasar beras. Ada jenis mi seperti bihun yang dibuat dari bahan dasar pati yang disebut soun. Pati yang digunakan umumnya berasal dari limbah (onggok) sisa produksi lainnya, terutama limbah tapioka dan limbah batang muda kelapa/ aren, pati tersebut biasa disebut pati onggok. Pati yang berasal dari batang muda kelapa diproduksi dari bagian muda (atas) batang kelapa, yang mirip seperti sagu. Bagian batang pohon lunak tersebut dikeruk/ diparut kemudian diolah menjadi pati.
