Came here for a birthday dinner of 6. I love how the menu changes seasonally and that they use local ingredients. I thought it was a cool concept. The halibut was absolutely amazing. Very fresh and well seasoned without needing a lot of salt. Definitely one of the best fish dishes I've ever had. The strawberry and blue cheese salad was good too, and I'm not usually a blue cheese fan. The desserts were good but not mindblowing, a bit overpriced. The staff gave us free ice cream as a surprise. Our server was very nice.

We stopped by Gaskins randomly for dinner after a recommendation, and were lucky enough to get a spot immediately. Everything about it blew us away -- food was amazing. I can't remember exactly what we got, but the entrées were incredible! I would skip on the bone broth though.
It was also the cutest restaurants and seemed perfect for a special occasion or date night. Our server was the loveliest human as well, and really made us feel comfortable and cared for throughout the experience. Highly recommend!Helpful 0Thanks 0Love this 0Oh no 0 - Aug 9, 2023
I first heard about Gaskins when a bartender I follow on Instagram who used to work in NYC announced a residency here. When my partner and I travel upstate, we tend to limit our dining out to the Hudson area, but I bookmarked Gaskins just in case. Fast forward to last week's trip to Hudson, and we found ourselves wanting to venture outside of our typical haunts. Germantown happens to be very close to Hudson, so we popped over hoping to snag a table (to my knowledge, they don't take reservations). What ensued was a quintessential Hudson Valley meal: farm-to-table focused on seasonal produce, and healthy without compromising on flavor.
We came here at around 8:15 on a Friday night. While it was somewhat busy, there was no issue finding a seat quickly. The space itself is warm and cozy, a little rustic, and has some tavern vibes. The service was attentive throughout, starting from the swift arrival of a bottle of tap water.
It appears that the drink menu is absent online, but I can attest to a solid list of cocktails and wine. My first drink was called the Gardner (if memory serves), which was sort of like a cross between a martini and white negroni (it had gin and salers) and it was super tasty. I also tried a glass of white wine that was excellent, thanks to good direction from our server.
Food-wise, everything you could possibly order here is fresh, seasonal, local, farm-to-table, colorful, flavorful, delightful. A great mix of proteins in both the appetizer and entree sections, and some sides that should not be missed. I recommend sharing everything to get the most bang for your buck. Eats, below:
Heirloom tomato and peaches w/ chorizo, charred corn, basil: A
Summer in a dish. Tomatoes, peaches, and corn, oh my! This salad was bright and fresh, and super tasty. Though the produce was the star, the chorizo was seriously delicious.
Roasted beets and blueberries w/ radicchio, bleu cheese, buttermilk, basil: A
We were between this and a cucumber salad, but this preparation looked like it would give us more variety once we decided on the tomato salad. The golden beets were divine, the radicchio added some bitterness while the buttermilk dressing was creamy but not too heavy. Beautiful combo of flavors.
Striped bass w/ coconut rice, peach, corn salsa, romano beans, shishitos, basil: A-
Another lovely summer dish featuring an impressive array of seasonal produce. More peaches, corn, and basil, so the flavor profile was fairly similar to the tomato salad. The fish itself was fresh, light, and cooked well.
Wood roasted half chicken w/ corn on the cob, red onion, hot honey butter: A
My partner tends to oppose ordering chicken at restaurants because we can easily make it at home. While part of me sees where he is coming from, I also know that there are few things more nourishing than a great roasted chicken dish. This was a prime example. Absolutely spectacular dinner at Gaskins. What a beautiful experience!
As they are first come, first serve, we waited around 45 minutes for a table. This was such an easy wait due to the hospitality our bartender showed us. He was so attentive and made some killer cocktails.
We were sat and ordered right away after that. The menu is farm to table so the menu is constantly changing. We had a cucumber dish that was perfectly refreshing to start. We also had bread and butter from the bartlett house (one of my favorite bakeries ever). We then shared three dishes including corn carbonara, wood-roasted carrots, and sea bass. All of the dishes were absolutely off the charts.

probably our last visit to Gaskins before it closes was terrific. The place was very busy, we had great service, terrific burger and fries, an ok Caesar salad and a fabulous peach raspberry pie. we thought prices high but that's ok, quality super-duper, and a neighborhood establishment just can't go on more. We have overall enjoyed it through the 10 years we've gone. Thank you so much for providing a lovely happy place.

We brought friends. Maybe an off night but made us sad for a place we have loved.
Apr 1, 2023Previous reviewOur meal last night was perfect; we were in the mood for burgers and this restaurant makes the best--and we're experts...along with those at Le Petit Bistro in Rhinebeck. Here they're cooked perfectly, crispy fries, the best buns--homemade and with sesame seeds, lettuce, pickled onions, and one great glass of wine. No room for dessert. Lively setting, nice fellow diners, lovely attentive service without fawning. And fair prices, we'll be back. A 20 percent tip is added, which is deserved. Definitely a must in the cute town of Germantown.
Jun 19, 2022Previous reviewWe had a great meal last night, came early when it opened to get out of our hood. Super burger for one and blue fish for the other, great cucumber salad to share. We skipped the bread for $5 and had no room for dessert. We had the loveliest waitress who helped with choices, good wine and big pours, and it has such a warm inviting vibe. We can't wait to come back soon. We highly recommend this restaurant.
Dec 13, 2015Previous reviewWe enjoyed the setting, very warm and cozy; wonderful waitress and the co-owner came over and greeted us and nicely asked us to move to accommodate a large group and said she'd buy us drinks, not necessary but nice! Nice bar area. We didn't eat much since it was later and after a movie but the burger was great, and we went for the salad instead of the super looking fries, and a pork sausage, which wasn't as good but oh well. The bread was warm and crusty and sweet butter which we tried to avoid. There aren't tons of items on the menu yet we will go back. A good addition to the Hudson Valley and affordable prices for food and wine. We look forward to new entrees and appetizers as well. And we hope the food will only get even better.

The food just wasn't that good, My duck was vinegary, and my husband's halibut was smothered in a tasteless sauce. Our kids got tacos which were so-so. It was also really expensive for what we got--we were charged for bread--what???
Also, the music was oddly REALLY loud, so much so that I had trouble hearing my husband across the table. If you are hard of hearing or are with someone who is, I would absolutely not recommend.

This place is a local favorite for me and my family - I feel like a bit of a traitor for never reviewing it before! Such a creative, ever-changing menu with local ingredients and an awesome staff. If you're in the area, it's a must try.
The space is both modern and cozy at the same time. Think contemporary color schemes with lots of wood accents and fun, warm light fixtures.
I've been here a dozen times and always leave full and happy. This time we branched out and started with the Fried Celery Root, which our server described as "like friend green tomatoes but the texture you wish they were," which was spot on. I'll be keeping an eye out for this everywhere I go from now on.
After that we tried the burger, which is always a home run here, and the squid ink pappardelle. So yummy! This is the kind of place you could eat at every week and always try something new and delicious.

The food was very good. The host was delightful. If only we could hear each other. I asked to have the music turned down and was chastened by one of the staff (a manager? who knows - she never introduced herself.) So weird.
As a former server, I truly cannot imagine chastening a customer who asks to turn down really really loud music - especially at a restaurant that prides itself on its quality.
Gaskins, no one is above kindness.

It can happen - we all have bad days, but this was something else.
I was really looking forward to finally checking out the Gaskins everyone loves but the 90 minute plus wait for a table, the unrelenting conversation-killing noise level, and finally the poorly lit dark table took my appetite away. Overall, I enjoyed our experience. Everything we ate was fresh and delicious. I do recommend the Burrata and Fried Corn as appetizers because it was delicious! Our server was very kind and the restaurant looks nice. In contrast, however, the dessert was not of the highest quality. We shared the Chocolate Hazelnut Cake and it was not good The cake was super dry and the rosemary frost was very strong.
