This Anti-Inflammatory Green Chickpea Goddess Sauce Tastes Amazing On Just About Anything
When it comes to stocking your kitchen, nothing is more useful than ingredients that can be incorporated in a whole slew of different recipes. It's why beans and rice have a home in so many people's pantries, and same goes for other versatile staples like oats, eggs, and olive oil. (That and all its heart-healthy nutritional perks.)
Chef Palak Patel, who owns the vegan Indian street food restaurant Dash & Chutney in Atlanta and is leading Well+Good's 2022 ReNew Year program, has a multitasking go-to in her fridge too: a green chickpea goddess sauce. "This is the most versatile, easy sauce that I keep a big batch of in my fridge. I practically slather it on everything," she says. Not only is it full of flavor, but it will also add inflammation-fighting powers to anything you make with it.
Here's a run-down of what's in it: chickpeas, garlic, serrano pepper, cumin, coriander, cilantro, parsley, and lemon. In the latest episode of Cook With Us, Chef Patel shows how to transform these ingredients into a vibrant sauce in just a few minutes.
The one piece of cooking equipment you need to make this chickpea green goddess sauce is a good blender. Chef Palak uses the Ninja Foodi Blender & Processor System ($230). Besides that, all you need are your ingredients and a knife and you're good to go. Simply toss your herbs, serrano pepper, chickpeas, lemon juice, garlic, spices, olive oil, water, and ice, into the blender and blend for about a minute.

"The chickpeas help bind the sauce together and give it a little bit of body," Chef Patel says as she adds them to the blender. It also gives this sauce a bit of protein, something most sauces cannot boast. As for the water and ice, she says this helps keep the greens vibrant and fresh. "The blender does get a little hot," she explains. After blending the ingredients together for about a minute, your sauce is completely done. I mean, it truly does not get much easier than that.
"I like to store my sauce in an airtight glass container. This is going to help keep the sauce fresh for long," Chef Patel says. Then, you have it on hand to use on eggs, salads, grain bowls, rice, meat, tofu, or anything else you want to give extra flavor (and nutritional benefits) to. Chickpea green goddess sauce recipe
Ingredients
1/2 can chickpeas, drained and washed
1 cup cilantro loosely packed
1 cup parsley loosely packed
1 small clove garlic
1/2 small serrano pepper
1/2 lemon, juiced
Kosher salt, to taste
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp cumin seeds (optional)
1/4 cup ice
3 Tbsp water (more as needed)
1. Add all ingredients to a blender with ice and water.
2. Pulse to incorporate and then blend until smooth. Adjust seasoning with salt as needed.
