This is an impressive and beautiful but quick weeknight dinner. It's perfect for dinner for one or date night. It also highlights the beauty and freshness of summer strawberries.

I eat a lot of rotisserie chicken and I like to change up the texture by crisping it up in a few tablespoons of oil. It takes about six minutes but it adds so much to salads and soups. And you can use the skin to make chicharrones, which make a great crunchy addition to salads and soups.
