Crunchy Loaded Gluten-Free Baked Potato Crackers

Ingredients

  • 1 cup shredded sharp Real California Cheddar cheese
  • 1/4 cup instant potato flakes
  • 1/4 cup smoked almonds, finely chopped
  • 3 tablespoons real bacon bits
  • Real California sour cream and snipped fresh chives (optional)

Steps

  1. Preheat oven to 400°F and spray 24 mini muffin cups with cooking spray or lightly grease with butter.
  2. Stir together cheese, potato flakes, almonds and bacon bits in a medium bowl.
  3. Place equal amounts into each muffin cup and bake for 10 minutes or until golden brown.
  4. When cool enough to handle but still warm, carefully remove with the pointed end of a small knife. Serve with sour cream and chives for dipping, if desired.
