Crunchy Loaded Gluten-Free Baked Potato Crackers

Ingredients
- 1 cup shredded sharp Real California Cheddar cheese
- 1/4 cup instant potato flakes
- 1/4 cup smoked almonds, finely chopped
- 3 tablespoons real bacon bits
- Real California sour cream and snipped fresh chives (optional)
Steps
- Preheat oven to 400°F and spray 24 mini muffin cups with cooking spray or lightly grease with butter.
- Stir together cheese, potato flakes, almonds and bacon bits in a medium bowl.
- Place equal amounts into each muffin cup and bake for 10 minutes or until golden brown.
- When cool enough to handle but still warm, carefully remove with the pointed end of a small knife. Serve with sour cream and chives for dipping, if desired.
