Chicken Legs’ birthday is coming up, so I’ve been testing out some recipes for his birthday cake. He LOVES German chocolate cake, so I whipped up this German Chocolate Bundt Cake last weekend to see if it was a contender for the big day. Well, not only is this a contender, it is the winner! He loved it! Moist German chocolate cake, homemade chocolate ganache, coconut, and pecans – what’s not to love?!?!?!
How to Make Easy German Chocolate Bundt Cake
This cake is super easy to make. It starts with a box of german chocolate cake mix and a can of coconut pecan frosting. Place both in a mixing bowl, add water, eggs, and oil. Mix with a hand mixer until the cake batter is smooth. Pour the batter in a bundt cake pan and bake.
Once the cake has cooled top it with a quick homemade chocolate ganache made from chocolate chips, heavy cream, and a touch of corn syrup. Finally, sprinkle the cake with coconut and pecans. YUM!
How to Serve Bundt Cake
This cake is AH-MAZ-ING! Super easy to make and even easier to eat. We like to top the cake with some fresh whipped cream and a sprig of mint. It is also equally delicious with a big scoop of vanilla ice cream. Feel free to pop your cake slice in the microwave for a few seconds to warm it up. I wouldn’t go more than 7 or 8 seconds. Perfection!
This cake is perfect for a potluck or party! You can make it a day or two in advance and store it in an air-tight container.

German Chocolate Bundt Cake
Equipment:
Ingredients:
Cake
- 1 box German Chocolate cake mix
- 1 cup water
- 1 cup vegetable oil
- 4 eggs
- 1 (16-oz) can Coconut Pecan frosting
Chocolate Ganache
- ¾ cup semi-sweet chocolate chips
- 3 to 4 Tbsp heavy cream
- 1 Tbsp corn syrup
Instructions:
- Preheat oven to 350ºF. Grease a bundt cake pan with cooking spray and set aside.
- Combine cake mix, water, oil, eggs and frosting in a large mixing bowl. Beat with a handheld mixer until smooth.
- Pour batter into prepared pan.
- Bake for 50 minutes, until cake tests done.
- Allow to cool in pan for 10 minutes. Invert pan onto a wire rack and cool completely.
- In a small saucepan, melt chocolate chips, heavy cream, and corn syrup.
- Pour chocolate over cooled cake. Sprinkle with coconut and chopped pecans, if desired.

You may be overmixing the batter?? Maybe try a different brand of cake mix?
