I wish to thank fellow The Traveler-Watchman reporter Lisa Finn {who is now affiliated with northforkpatch} for her item titled "The North Fork Shack Opens in Southold; Owners Report 'Great' First Day {~} They're open! The North Fork Shack is a dream come true for owners Samy Sabil of Riverhead and Ryan Flatley of Southold"

Lisa's post was dated Thursday, April 28, 2016 -{&}- I just felt like doing my own salute to The North Fork Shack incorporating some of her original text.

I was pleased to learn that Samy Sabil and Ryan Flatley "met when they began working together at the North Fork Table & Inn..." They are renown for "their Creative Courses catering business, which offers seasonal fare for all occasions." The duo APPeared before the Southold Town Planning Board January 2015 presenting their idea of renovating -{&}- converting the-then "60’ x 40’ former tool shop"... "into a fun, casual, and affordable takeout eatery."

The interior sounds impressive: "The walls are painted a vivid blue, and handmade wooden tables evoke the colors and feel of sandy shores. Bright whites and sage greens complement the pendant lights that illuminate a long, whitewashed wood counter near the front." "The plan is to have seating for 16 inside, with takeout the primary focus."

"The menu on opening day featured soups, a local fish sandwich with Ole Bay aioli, an S.L.T. with crispy shitake mushrooms, pulled lamb on pita, avocado hummus and much more.... The North Fork Shack will feature seafood, and an abundance of whatever fresh, local produce and fare is in season — as well as some international touches."

Depending on what's in-season, The North Fork Shack menu will be "ever-evolving." The duo can "explore culinary horizons and try out new recipes." Twenty-to-forty-new dishes will be "unveiled over the four seasons each year."

"The ambiance is meant to be relaxed, a perfect stop for those visiting local wineries or beaches — or for harried moms and the after-work crowd who hope to grab a delicious meal to go."

Sounds like a definite welcome -{!}-
