As a venue that works with Cornbury House Farm and other regional producers, we know how much work goes into producing food and recognise what a precious resource it is. Harvesting and delivery processes, for example, often must be accurate to the day or just a few hours so that food can be preserved and supplied to us all - and we want to respect this wherever we can. Therefore, we use a few techniques to minimise food waste. Our head chef Ben explains: “We like to get the most out of seasonal produce the old-fashioned way. Pickling, jamming, and preserving seasonal fruits and vegetables that are no longer available. Green gauge plums, for instance, have such a short season that we bought them on a large scale at their peak. We then served them fresh with chocolate sorbet and cobnuts in the late summer and turned the rest into a chutney to be served with our selection of British cheeses.” With this attitude and the right preservation techniques, we constantly try to make the best possible use of our food stocks. Among the recommended practices for the grape harvest is to avoid picking grapes during the hottest hours, as in such conditions, they are more prone to damage and dangerous fermentation processes. It’s no coincidence that in the hottest regions of Italy, night harvesting is practiced to take advantage of cooler temperatures. This message is to provide advance notice to importers of fresh fruits and vegetables that the Canadian Food Inspection Agency (CFIA) will be implementing temporary import conditions for U.S. romaine lettuce again this fall. This temporary measure is intended to mitigate the higher risk of E. coli O157 contamination of romaine lettuce grown in the Salinas Valley, California, during the fall months. Similar measures were implemented in fall 2020, 2021, 2022 and 2023. From September 28 to December 20, 2024, importers of romaine lettuce and/or salad mixes containing romaine lettuce will be required to comply with temporary additional Safe Food for Canadians (SFC) licence conditions. During this period, the CFIA will require importers to submit attestation forms and Certificates of Analysis to confirm that the romaine lettuce does not contain detectable levels of E. coli O157:H7 if the lettuce was grown in the Salinas Valley. A Proof of Origin will be required for U.S. romaine lettuce products that are from areas outside of the Salinas Valley.
