Did you know that this year marks the 20th anniversary of the New Nordic Food Manifesto?⭐ It’s hard to talk about Copenhagen’s rise to becoming an international culinary hotspot without mentioning the New Nordic Food Manifesto. 👩🍳Signed by 12 Nordic top chefs back in 2004, the manifesto changed the Danish approach to cooking and the use of local products, paving the way for a whole new gastronomic wave. It also marked the beginning of a new era for Copenhagen, where restaurants like Noma conquered the world stage of gastronomy. Today, 20 years later, Copenhagen’s food scene has evolved into a big “reason to go” for many visitors - the big difference being that it’s no longer just about the Nordic cuisine. The city has become a fantastic melting pot of different world cuisines, types of eateries, and new food trends. In fact, there’s something for every taste and budget. So, while Copenhagen is so much more than the epicentre of Nordic cuisine, we can’t emphasise enough the significance of the manifesto.
