Executive in Sustainable Agriculture, Food and Innovation. Sometimes I wear a suit, sometimes I wear boots. Host of the region's largest Agri Radio Program
In the realm of gastronomy, few tales are as fascinating as the transformation of the lobster from a meal fit for paupers to a delicacy savored by epicureans worldwide. Once considered little more than "poor man's food," the lobster has clawed its way to the upper echelons of fine dining menus, commanding prices that would make even the most affluent diner pause. In centuries past, lobsters were abundant along the Atlantic coast of North America, so much so that they were frequently used as fertilizer, bait, and sustenance for the less fortunate. It's said that during colonial times, servants would stipulate in their contracts that they wouldn't be served lobster more than a certain number of times per week, such was its ubiquity. But oh, how the tables have turned. Somewhere along the way, the lobster shed its humble reputation and donned the cloak of luxury. Perhaps it was the advent of railroads, which enabled fresh lobster to be transported inland, or maybe it was the marketing genius who decided to rebrand this crustacean as a symbol of opulence. Today, lobsters grace the menus of the world's most exclusive restaurants, served with a flourish and accompanied by exorbitant price tags. Diners eagerly fork over their fortunes for the chance to savor the sweet, succulent meat encased within those formidable shells. What caused this seismic shift in perception? Was it simply a matter of scarcity breeding desire, or did the lobster undergo a Cinderella-esque makeover, emerging from the depths of the ocean as a glamorous star of the culinary world? Whatever the reason, one thing is certain: the lobster's journey from humble beginnings to haute cuisine has been nothing short of remarkable. So, the next time you crack open a lobster tail or dip a claw into melted butter, take a moment to appreciate the rags-to-riches tale of this once-humble crustacean. After all, every lobster has the potential to become a king or queen of the dining table—it just takes the right combination of time, taste, and a touch of culinary alchemy. #Agriculture #sustainableagriculture

In this fourth installment about places to eat in Split, I venture outside the city to recommend three very good dining spots worth the detour. While Split keeps developing the culinary scene, sometimes the best experiences are found a little off the beaten path. To be frank, these places are "off the beaten paths" only for tourists, not for locals. These selected establishments offer a break from the hustle and bustle of the city and also provide distinct culinary experiences that highlight the rich gastronomic traditions of the Dalmatian region, often focusing on one particular culinary tradition. Whether you're planning a day trip or simply looking for a memorable meal on your journey, these spots are well worth the effort. Here are three tried and tested places that I recommend: Konoba Vinko, Konjevrate – Located about 70-80 kilometers before Split on the A1 highway, just 7-8 minutes from the Šibenik exit, this konoba exemplifies traditional cooking with fresh, local ingredients and a welcoming atmosphere. They serve outstanding prosciutto, an extremely tasty veal risotto, and delicious roasted suckling pig. There is a large parking area just outside the restaurant, but be sure to call and reserve in advance to avoid disappointment. Restaurant Perlica, Klis – Known for lamb roasted on the spit, a Dalmatian hinterland specialty, Perlica is about 20 minutes outside of Split, on the way to the A1 highway near the Klis fortress. The best time to enjoy lamb is in early spring, and Perlica has secured its supply chain to ensure quality and consistency. With three or four lambs always roasting, you’re in for a treat. The service is consistent, and the wine list offers a few good choices. Konoba Nikola, Stobreč – Although the interior may seem a little outdated, Konoba Nikola excels in preparing seafood. If you enjoy shellfish, this place offers a selection like no other in the wider Split region. They consistently deliver fresh, well-prepared ingredients and a decent wine list with Dalmatian favorites. This place has a cult status among the wealthier residents of Split, making it challenging to secure a dinner table, especially in the shoulder months. #splitdiningscene #hospitality #restaurants #placestoeat
