My name is Joey Angelo, please join us and at Cocktails as we explore the most iconic venues in New York City and get to know the creative minds that makes the best content. Mr. Tim Sweeney, how you doing? I'm doing fantastic. Thank you. So we're at the floor known as Johnnies inside the beautiful iconic bubble bar. You tell me about the origin and history. So this place is known as Johnny's because of Mr. Johnny Carson. The way it's told, Johnny Carson didn't really want to go to the street and get mobbed. So in order to come in here and have himself a drink, they built a little stairway in the back that goes straight up to NBC. This became known as Johnnies as an homage to him. This place was built in 1892. Then prohibition came and this place. As a Speakeasy. Then John D Rockefeller started buying up all the area around here to make Rockefeller Center. According to legends, some Irish folk basically told John D Rockefeller they won out. And so this place sat dormant for 20 years until Pebble Bar was born in 2022. Wow, that's amazing story. Amazing. You walk us through this cocktail and the thought process and the history behind it, please. OK, This is the Fats Domino. It's on our most recent menu that came out here at Bubble Bar. The menus being done by myself. And my consiglieri Dante Calicchio. So I was sitting there looking for an idea that no one had yet. I've never really done anything with blueberry. I'm sitting there and I go blueberry gin things that I think are underrated that don't get done enough. So that's kind of what this is right here. And then the name Blueberry Hills are famous song. And I looked it up and I go, oh, there's 30 cocktails the world named Blueberry Hill. So let's name it after the man who actually is known for singing the song Fats Domino. And there you go. Now walk me through the actual build itself. Sure, the build itself a firewater tincture with it. It is a spicy bitter, but I found this. One does not add flavor, it is just pure heat and that's what I wanted. So we got our lemon juice, we got Demerara sugar. We tried it with simple. Nope, we wanted that 2 to one dark and we got 1/2 ounce of pineapple. Then we got some blueberry puree. We had ume plum because that's a woman owned business and we had it for woman's month here. And I go, well I actually like the way it tastes. So let's see if we can put in another duck bill. Boom, we got that. We got lemonade, which is like a lemon apertif, which goes great with spritz and Prosecco. And then I got my London dry gin. We used Fords for this one. Up and that was announced and a half and it all came together Garnish. You got the blueberry lemon on a pick you're watching Go for it. This is the best part right? If it's not, I've messed up. Alright, I'll tell you. Well, that's awesome. Citrus is awesome. That's a really kind of comes through. The blueberry is awesome too. Well done, my friend. Alright, what inspired you to start bartending? This kind of communication that exists perfectly between a bartender and a guest is something that's just germane to my life. From Madison, WI, bar backed for awhile and I ended up coming to New York in a Chevy Impala with every one of my possessions in it about a decade ago. Came here and then when I ended up in the bar scene, it eventually just became, well, if I'm going to do this, let's be really good at it. Tim Sweeney. Yes, Sir. Thank you my friend.
