"Wow, this is so much better than Starbucks!" This is one common refrain I often hear from folks unfamiliar with local coffee when they first try it at one of our local coffee tastings. So how does this happen? How does local coffee taste so much better than Starbucks? Outside of personal preferences, there are a couple of reasons for this. Perhaps the biggest driver of this is that to create a uniform quality level at all of their cafes, Starbucks has been accused of "burning" their roasts to ensure you get that signature strong and smooth cup at every location. For Starbucks, unique and special flavors are the enemy when providing a brand standard across thousands of sites worldwide. In contrast, with local roasters, most of which only have 2-3 locations locally, the mission shifts from uniform, repeatable blends to crafting the best possible cup every time. Not having to ensure millions of locations have the same cup allows for local roasters to do things like create single-origin blends or try beans from other parts of the world that Starbucks can't because of the volume needed to offer it to the general public or craft a cup that's true to their vision of how coffee should taste and feel. Everybody is entitled to form their own opinion on coffee. Still, one of the perks of my job is getting to show folks that there's more to coffee than they've been shown their whole lives, that the coffee world can be something as interesting as the wine world, and that you don't have to settle for burnt and bitter coffee.

For example, a "blonde roast" is a light roast coffee, and a "red eye" is a coffee with a shot of espresso added. Some of these terms are even known to the customers like "tall", "grande", "venti", and “trenta”, which are used to refer to the different coffee cup sizes. I need to spend $200 at Starbucks to get 1 free Cold Brew... ...Contrast, to the bougie coffee shop 2 blocks away (my wife's favorite for Americanos), I get 1 free one every 10 with a stamp card. Starbucks: 2.5% Rewards. Bougie: 10% Rewards. Except, I still go to Starbucks every morning because they are the only place with Nitro Cold Brew. Getting "free" coffees doesn't sway my morning decision in the slightest. When thinking of your positioning it's not just about price or discounts. Differentiation (only one with Nitro) or brand or convenience, among others, play a part.

At Starbucks - a 10oz light roast cup of freshly brewed coffee was $3.25. At Kuju - a 10oz light roast cup of freshly brewed coffee is $2.50 (what a deal!). At some instant brands - a 10oz “specialty” light roast of freeze-dried coffee is $2.50 or more. If less, it’s not specialty and a convenience buy, not a quality one. That’s ok! But - the age of hyped instant is over. Why? Hype dies. It was in all the press! New packaging! It's now premium! But a commodity market adjusts pretty quickly. And in an age of more discerning pocket books, quality wins, because the purchase ROI needs to be higher. Instant has been and always will be at base, an authentically convenience-first purchase (read: price sensitive purchase) - even for cafe operators! Read on: Instant is now some cafe operators’ way of increasing margin while adjusting communications to persuade it's better; still lessening quality (many of these cafes use instant instead of real espresso). “Quality is Never Instant, But It Can Be Convenient.” was Kuju's 2015 Kickstarter motto. Starbucks Pork belly flavor latte? Hummm… Is this considered as a responsive move to the white liquor flavored coffee launched by Lucky Coffee? Anyway I put some numbers together from a rough research: 450 million coffee drinkers x 1/3 market share for Starbucks in China x USD4.5 per cup x 1/2 try ratio = USD337.5 revenue to be generated, which would give the coffeemaker a 8.8% bump from its revenue in the counury for the quarter ended 10/1/23. I used a 1/2 try ratio because the flavor seems absurd to me. But usually the more absurd it is the more curiosity it creates.
