This is Gio and his pizzeria inside a coffee shop. His story is unique and inspiring. He started in November of 2022, coming from a family with deep pizza roots in Chicago. Gio spent 18 years in finance before deciding to follow his passion for pizza full-time. He started with mobile catering, using Ooni ovens to serve pizza at events. His love for pizza led to an ambassadorship with Ooni, showcasing his dedication to the craft. Running a pizzeria inside a coffee shop allows Gio to keep overhead low and focus on quality. His menu is simple, featuring hand-stretched Artisan pizza, grandma-style pizza, and Detroit-style pizza. In 2024, you don't need a menu with 200 items. Actually, having a big menu can hurt your business. People think pizzerias with huge menus are lower quality. So, here's a tip from Gio: cut your menu in half. It'll make inventory easier.
