I have come late to the appreciation of blended sake - for a long time I couldn't really see the point (probably because sake can be delicious just as the toji brewed it). Blending drinks seems more of a western beverage concept, and I worried that the traditional virtues of sake might be overlooked in favour of the latest smart blend. But last year I was lucky enough to witness Dirk van der Niepoort work magic with François Chartier's selection of beautiful sakes. It was a highly thought-provoking experience, and ultimately it convinced me that blended sake has its own (very special) place. You would probably agree that a person who can blend a fine drink must have the mind and palate of a world-class chef. And yet, food is somehow easier: the ingredients have straightforward flavours, and are fresh, or preserved in a particular condition. Drinks such as sake, wine or whisky are complex, however, and are constantly evolving and changing. As I watched Dirk working through the samples, I realised that blending a drink is a much more imaginative process: not so much an art as a feat of intuition. Most importantly, the blend that Dirk created was clearly different from the original sakes, and it was delicious. I still love sake as the toji brewed it, but I am no longer a blended sake sceptic! And this is the sake that convinced me! #niepoort #sake

Highlight on local business...and on a founder who just so happens to be my neighbor. When we first moved to Bettendorf 8 years ago, it was common for me to get home from work and have John ask me one of two questions. 1. Do you want to see Saturn in the new telescope I just setup? 2. I'm looking at launching a distillery. Do you want to try some samples? For me, the answer to both of these was almost always yes. Here are five that might surprise you: 𝐎𝐫𝐢𝐠𝐢𝐧 𝐂𝐨𝐧𝐭𝐫𝐨𝐯𝐞𝐫𝐬𝐲: While marzipan is popularly associated with European cuisine, its origins are a topic of debate. Some believe it was first made in Persia (modern-day Iran), where almonds and sugar were abundant. Others argue that it originated in China and was brought to Europe through the Middle East during the Crusades. 𝐑𝐨𝐲𝐚𝐥 𝐃𝐞𝐥𝐢𝐠𝐡𝐭 𝐢𝐧 𝐭𝐡𝐞 𝐌𝐢𝐝𝐝𝐥𝐞 𝐀𝐠𝐞𝐬: In the Middle Ages, marzipan was considered a luxury item and was often used in royal feasts. Its high sugar content made it expensive and exclusive, often reserved for nobility and the wealthy. In fact, marzipan was sometimes used to create elaborate sculptures that were displayed at banquets. 𝐋ü𝐛𝐞𝐜𝐤: 𝐓𝐡𝐞 𝐌𝐚𝐫𝐳𝐢𝐩𝐚𝐧 𝐂𝐚𝐩𝐢𝐭𝐚𝐥: The German city of Lübeck is renowned for its marzipan and claims to be the birthplace of this sweet treat in Europe. According to local legend, marzipan was created in Lübeck during a famine when the city ran out of all foods except stored almonds and sugar. 𝐌𝐞𝐝𝐢𝐜𝐢𝐧𝐚𝐥 𝐔𝐬𝐞𝐬: In the past, marzipan was not just a confection but was also used for medicinal purposes. In the 18th century, pharmacies sold marzipan as a remedy for various ailments. It was believed to have soothing properties and was used to treat stomach discomfort. 𝐀𝐫𝐭𝐢𝐬𝐭𝐢𝐜 𝐌𝐞𝐝𝐢𝐮𝐦: Beyond being a tasty treat, marzipan has a long history as an artistic medium. Immersed in the artistry of embossing, intricate cutting, and embellished with copper bitmap foil, our calendar features a bountiful vine set against grape paper. Harvested in France during September and October, grapes symbolize the essence of “wine country.” Viticulture’s roots trace back to the Celtic and Roman Gaul, introduced by the Phocaeans in the 7th and 6th centuries BC.
