Meet Aldo Novoa, whose culinary journey began when he discovered his passion for food from his grandmother’s cooking and the rich diversity of Mexican cuisine. With a major in Culinary Arts from his hometown and a desire to learn myriad cultures, Chef Aldo traveled to Cancun, Canada, Puerto Rico, Naples, Los Cabos and Aruba where he worked with the prestigious Ritz-Carlton brand. Because of Chef’s passion for growing and developing others, he earned his certification as trainer for Marriott luxury brands. During his time with Marriott Intl., Chef Aldo had the opportunity to travel and serve as trainer for multiple properties. Intrigued by the complexity, range of offerings and prestige that Pier Sixty-Six offers – Chef joined the property to spearhead & lead the culinary team towards excellence and innovation.
