A great talk given by our IFBM - Institut Français des Boissons de la Brasserie et de la Malterie General Manager Marc SCHMITT about proteins in malting barley 📌 keypoint is : do barley and malt really need 10% proteins content to have good brewing properties ? 🧐 why being concerned ? Proteins come from fertilization, which is itself responsible of 75% of the CO2 emissions of barley production ❔ results : this long-term fundamental R&D project is at mid-term, as for now it is highlighted that barley variety is preponderant. Some varieties give very good malt even at less than 9% proteins. A strong database is being built, more data coming !
