Who the Hell told y'all that cabernet sauvignon is the best thing to drink out there? I work at small winery. I get battered and grilled on running out of cab. Demand for our cab is high, and having scarcity is a good and bad thing. Our reserve bottling, under a new production manager and winemaker, mind you, is having a great pre-sale, and this leaves room for our wine stewards to sale our alternative bottlings like montepulciano, mourvedre, and sagrantino! Despite our best efforts, there are cabernet-holics that outright refuse to drink anything besides cab. If we can persuade them to drink something else, deep down, they're still not happy and I try not to take that personally. Keeping my altruist nature in check, it's all a challenge. Guest: *looks at menu for 2 seconds* "Do y'all have a cab?" While that question is a little annoying in thinking, "Ma'am, did you even read the menu? I know you didn't, but anyway." However, I see this as nothing more than an opportunity to sell, the opportunity cost is no wine amongst many other costs. This is also another opportunity to help educate the consumer on wine styles and to help expand a palate. In the New World, we can do pretty much whatever we want, but Americans have coddled the idea that hot, goopy, unnecessarily manipulated, cab is the answer. Therefore that's the best we have so let's drink the best. Cringe. Wine professionals can make serious money off cab. I won't argue against that, and by all means, make your living as you see fit. When wine professionals make cab their focal point, they're sell outs. Sue me. #wineindustry #winebusiness
