What are 47% of Americans looking to cut back on? If you answered sugar, give yourself a cookie. Or maybe a carrot. In fact, according to our Diet Drivers research (https://lnkd.in/ge7QuANj), sugar and high fructose corn syrup are the top ingredients that consumers want to limit, even more than sodium, fat or carbohydrates. Recently, Prepared Foods Magazine highlighted a couple of articles regarding the sugar content in the foods and beverages that we consume. One, an interview with Kantha Shelke, PhD, a principal of Corvus Blue, LLC, covered the imperatives and challenges in reducing sugar in kids’ cereals. The other reported on discussion of low- and no-calorie sweeteners at the recent forum of the International Food Information Council. Too often, the discussion about sugar has focused on either full sugar or no sugar options. We’ve taken an all or nothing approach to sugar in our diets. We’ve ignored the middle ground of sugar reduction, rather than elimination, though it’s also an option. Our research showed that consumers want to limit their intake of sugar, not that they want to eliminate it altogether. As Dr. Shelke points out in the article, sugar’s multiple roles in cereals and other baked goods make it a difficult ingredient to replace. In addition to sweetness, it also affects texture and extends shelf life. Other natural options like malted grain syrups, maple, and dried fruit or coconut have deeper flavor profiles than simpler sugars, and those additional flavor notes can enhance the perception of sweetness while allowing for a reduction in total sugar content. While I'm always looking to satisfy my sweet tooth, I’m happy to enjoy foods that enhance sweetness without adding more sugar. Another option for reducing sugar intake, low- and no-calorie sweeteners, have a public relations problem. “Believe it or not, LNCS are some of the most studied ingredients in our food supply,” Kris Sollid, RD, said. “But given conflicting messages to the public about their safety, public sentiment toward these ingredients seems to be at an all-time low.” Thoughtful, careful messaging and language are necessary as we talk about sugar reduction, whether it’s through food processing techniques like caramelization or roasting that enhance sweetness without sugar, ingredients like dried fruit whose complexity allows less sugar, or safe LNCS products that replace sugar. With the right communication, marketers can highlight the better-for-you benefits of lower-sugar offerings, without any compromise on taste and texture. The ingredients are available, and a sizeable audience will appreciate any effort that reduces sugar, even if we don’t want to eliminate it.

This week at work we shared a survey asking if people would want alternative milks in the coffee machines but personally I think this should not be a question, because we should make this a default for our planet, people and animal welfare. If we have the scientific evidence that shows plant based food / drinks are better for the environment, what is stopping us changing our food habits? We have only one planet and I would like to think we would do everything to protect it if it was in our control? Especially big corporations can easily lead this space.
