Master Butcher 50 Years over 6 decades Well they say time flies when you're having fun. It has been 50 years this month since I started on a journey I never knew I was taking. From a young lad aged 12 making cups of tea and cleaning up after school , fast forward 50 years to being a Master Butcher with the Institute of Meat , working for a company doing a job I love. How did I get here? At the age of 16 I started my first full time job for a local Butchers , and what was my first job ??? The offal counter - Yay I have made the Big time. Back then it was a 6 foot counter with every type of offal you can imagine. The high street Butchers is where I learnt my trade , working with people who, as my Boss would say, " have forgotten more than you will ever know". I learnt how to break down all species of meat , unfortunately this is a side of the trade that is slowly being forgotten. I then worked in a super market concession where we would put on a 36 foot fresh meat display for which we won Gold Merit awards for our displays. I often wished we had the social media technology back then that we have now , I would have some fantastic pictures to show. After running a couple of shops for my company , I opened my own High Street Butchers , where during that time I was awarded with "The Best Butchers In Birmingham 2001", and was presented an award by the Lord Mayor of Birmingham. I then worked for the Midlands Co-op as Butchery Manager / Fresh food manager. I helped set up fresh food departments in New stores. I worked for a couple of other Wholesalers before I got to where I am now working for Bidfood. Since starting at Bidfood in 2017 I have had some fantastic opportunities to pass on some of my knowledge , from working with the Business Managers , Tele-sales to training chefs at their work place or Training Chefs on the Chefs Academy at Campbell's Butchers. People ask "What makes a Master Butcher"? Well 50 years in the Trade is a good starting point. Also being able to teach and train others in the meat trade , to have a full understanding of how to break down all Species of animal carcasses from beginning to end. This is just a small part of being a Master Butcher. I have been fortunate to work in an industry where I still love my job , yes even after 50 Years. What else has happened in the last 50 years? Married Ran Marathons ABA Boxing Champion school boy and senior Moved house a few times Met some Brilliant people on my way Biggest achievement .... Raised 2 Fantastic Kids :) Here's to the next 50 years lol

Turning best practices into a culture of safety and excellence using rigorous performance assessments, interactive consultation and task-focused training
In a previous job, I provided food safety auditing and consulting to a major national retailer. I won’t name them, however if you were to presume that this retailer’s team members wear red shirts and khaki pants, I would say you hit the bullseye. The grocery teams struggled with proper vertical separation of raw and ready-to-eat foods, particularly because this retailer’s standards were far higher than FDA Code and because there did not seem to be much in the way of signage or job aids to guide and remind them. Because I was citing a high-risk critical violation for improper raw meat/fish storage on more than 80% of my store evaluations. I approached my employer to ask if we might design such a job aid and was told “That’s not our problem, that’s their problem. Just do the audit, check the boxes, and move on to the next one.” Because I’d joined this company to teach, coach and drive improvement, I made this MY problem, and I created an infographic that presented the information in a fun and easy to understand format. I then offered PDF copies to each of my stores as they gathered the (red and khaki clad) grocery team for a quick huddle to review it at each store visit. Over the next few months, the citations for raw storage dropped by more than 75%. (While my employer likely lost revenue on revisiting failing stores, I enjoyed a sense of accomplishment and partnership with each one of my stores.) Fast forward a few years: I’ve moved on in my career and the retailer has explored different vendors to provide their food safety audits. While shopping in one of my former client’s stores, I met the grocery manager who led me into the food preparation room and showed me the poster I’d created, saying that his district had integrated it into their training materials for all new grocery team members. Neither I nor my former employer received any compensation for this poster which took me less than an hour to design in MS Word. In fact, I was chided by my employer when I inquired about creating the poster to fill a knowledge gap and increase partnership with this (very large) client. However the emotional compensation I received that day as I saw my poster, laminated and prominently displayed, was the best performance bonus I’ve ever received. Never underestimate the impact you make in your job and your life. You may not instantly see the results; in fact, you may never see the results at all. But each interaction with a coworker, a client, a friend or an acquaintance is a moment. You decide how that moment will be remembered.
