Is it just me? It feels like yesterday we were on the run up to Christmas then suddenly here we are and its Valentine’s Day! Where has the time gone? There’s a big divide over Valentine’s Day, a real love or hate thing. It’s like most things these days very commercialised and is very much big business. For some businesses though do remember it gives them a much needed boost that is needed after a bleak January. It would be nice if it wasn’t milked so much by some though, with prices that really soar but which will drop again tomorrow. It can also be a hard time for people who are alone, by design or otherwise just like some of the other annual events. However it can also be used as a time to give yourself some much needed love and affection, with a treat of some sort of just a bit of time out. We decided that a healthy salad might be the way to go with a glass of red, rather than chocolate. That may be the result of a cardiac CT scan, that luckily showed I have the arteries of someone less than 35! Got to look after that then! The bowls aren’t the greatest for laying the salad out just how you want it but I wanted the heart shaped ones, so it is what it is. There’s nutty brown rice, coleslaw of red cabbage, carrot and fennel, walnuts, sweetcorn, sautéed shiitake mushrooms and spinach, soft boiled eggs and of course smoked salmon. Chinese New Year, Pancake Day, and Valentine's Day – what are your favourite ways to celebrate? There is something about celebrations around this time of the year that I love... And it mostly because of the foods that are part of the festivities. With Chinese New Year on February 10th, I'm thinking of dumplings and steamed fish ... or maybe beef and broccoli noodles. ...maybe! For Valentine's Day on the 14th, there's a choice to made between chocolate cake or chocolate mousse... oh... decisions, decisions! But Pancake Day is easy. Through my childhood, we had thin – almost crepe-like – pancakes with a squeeze of lemon juice and dusting of sugar. And then I moved to Canada and the preferred repast changed to fluffy pancakes. Sometimes I'd enjoy them simply with syrup. Sometimes I'd include fresh blueberries, sometimes banana, sometimes with a side of crispy bacon. Oh, the choices. What hasn't changed is the choice of syrup – it was and still is lashings of real Canadian maple syrup. Storytelling doesn't always have to be a detailed adventure for you or your readers, telling all the twists and turns. Sometimes all we need is a few words to set the scene, include a personal note, and let a beautiful image help paint that picture. Happy Valentine's Day! To celebrate Valentine's Day, we have made a Valentine's Day Cocktail using some of our products – Cranberry NFC Juice, Lime NFC Juice and IQF Raspberries! Enjoy the recipe below with your romantic dinner tonight, the below recipe makes enough for 2 drinks. If you want a larger serving, we recommend doubling up the quantities below. Ingredients – Chilled Prosecco or Sparkling Wine 150ml Cranberry NFC Juice 50ml Vodka (can use another spirit if you prefer) 4 Raspberries (we used IQF Raspberries and defrosted prior to use) 1 tsp Lime NFC Juice (or could use a wedge of lime squeezed) 1 tsp Grenadine Handful of Ice Method – 1. Choose the glasses you would like to serve your Valentine’s Day Cocktail in – we used 2 champagne flute glasses. 2. Mix the Cranberry Juice, Lime Juice, Grenadine, and Vodka in a cocktail shaker with your ice or in a jug if you don’t have a cocktail shaker. 3. Strain the cocktail from the shaker or jug and pour into your glasses of choice. 4. Add 2 raspberries to each glass and top up with prosecco or sparkling wine. 5. Enjoy!

Try these delicious Heart-Shaped Pancakes with Berry Compote - a simple yet heartwarming recipe to make your day extra special. 🥞 Ingredients: - Your favorite pancake mix - Fresh strawberries and raspberries - A little sugar - Butter - Maple syrup Instructions: 1. Prepare your pancake batter as usual. 2. Pour the batter into a heart-shaped mold on a buttered pan (or freehand the heart shape if you're feeling adventurous!). 3. Cook until each pancake is golden brown and then carefully flip. 4. For the compote, gently simmer the berries with a sprinkle of sugar until they become delightfully syrupy. 5. Serve your heart-shaped creations topped with warm berry compote and a generous drizzle of maple syrup. Celebrate love, celebrate life, and most importantly, celebrate YOU! Funny, It is Valentine's day and NATIONAL CREAM-FILLED CHOCOLATES DAY Chocolate lovers rejoice as February 14th is National Cream-Filled Chocolates Day! On the same day, approximately 58 million pounds of chocolate will be purchased. Much of it will be in heart-shaped boxes, filled with bite-sized chocolates with ooey, gooey centers. Quite a few of these cream-filled goodies will be exchanged and shared on Valentine's Day. Chocolate makers offer a wide variety of cream-filled goodness, too. Take your pick from marshmallow cream, chocolate, vanilla, strawberry, coconut, hazelnut creme, and even creme de menthe. How about coffee cream-filled chocolates? Nearly every fruit you can imagine can be made into some sort of creamy center. What's inside those hard chocolate shells? Well, many chocolate makers provide a map so you don't accidentally eat one that doesn't sit well with you. One way to completely avoid the mystery is to create your own gift box with the flavors you select. Some chocolate makers offer this option. Not only do you select the chocolates your love likes best, but it's a personalized gift, too. How chocolatey sweet is that? It's also a terrific way to avoid biting into a flavor that will ruin the evening. No matter how you celebrate, be sure you bite into a cream-filled chocolate or two that you like!
