Our Client, a  a major food trading company, currently distributes frozen fish meat around the world. They have been faced with an issue that fish meat, particularly its dark muscle, browns rapidly when thawed. Although there are several technologies to prevent the browning of the dark muscle of unfrozen, fresh fish, existing technologies have yet to address the issue as the browning of the dark muscle progresses rapidly when it is frozen and thawed. Therefore, the client has issued this open request to explore the possibilities of developing this technology, not just using existing technologies to prevent the browning of meat but also seeking various kinds of knowledge and approaches from other fields. Meat or not meat? 🥩 This week the Dutch Meatable did the first consumer tasting of lab-meat (cultured meat). 🇪🇺 Within the EU it is not (yet) allowed to sell cultured meat. But in the Netherlands it is now allowed to organize tastings. 🇸🇬 Singapore was the first country to allow cultured meat in to the market. 💰 Companies like Steakholder Foods (Nasdaq: STKH), JBS USA, BRF, are among the 150 companies globally that invest heavily in cultured meat. In The Netherlands we have besides Meatable, Mosa Meat, that received an investment of Leonardo DiCaprio. 👨🍳 Dutch renowned Master chef Ron Blaauw did the tasting together with Prince Constantijn Van Oranje-Nassau of Techleap. New in Food Fix: A look at where cell-cultivated meat is now after it was first approved in the U.S. last summer. Veteran food tech journalist Megan Poinski unpacks the latest: “These products remain available only to a handful of diners at one high-end restaurant in San Francisco, with no clear path to a wider market,” Poinski writes. “Making cell-cultivated meat remains difficult and expensive, as companies work to improve their science, build facilities that can make large amounts of products, and create a cost-effective culture medium to feed the cells.” "Since June, Upside Foods and Eat Just have both been working toward scaling up and improving their products, but progress has been slow,” she writes. The piece goes into a lot more detail about the latest plans and current challenges facing each company, so go read the whole thing ⤵ Poinski also offers interesting new insight into what’s next for cell-cultivated seafood, which hasn’t gotten the go-ahead from FDA yet. “While cell-cultivated meat companies grapple with scale challenges, Justin Kohlbeck and Aryé Elfenbein, founders of cultivated seafood startup Wildtype, are laser-focused on working with FDA to get approval for cultivated sushi-grade salmon,” she writes. “The No. 1 question in every board meeting we’ve had over the last year or two that we’ve been asked is, ‘When is this gonna happen?’” Kolbeck said in an interview. “We don’t know, and I don’t think FDA really knows, because this is still very early days for them.” P.S. When we explore the costs of meat versus plant-based burgers, a fascinating truth unfolds. The difference in prices mostly comes from the extra support the meat industry gets. If we treat both equally, plant-based products not only become affordable but even cheaper than meat. I strongly believe that revealing the true cost of meat can lead to reduced consumption, encouraging more people to try and enjoy plant-based alternatives.

Will lab-grown meat be part of our food mix? If we look mid-term (5+ years out), I would say quite likely. Based on the trends we see I would see lab-grown as much more likely to last us rather than plant-based meat alternatives that have come under a lot of challenge. Interesting that global funding has dropped that much. We need to do more to educate people to understand where their tax money goes and how the system must change for the health of people and the planet. The only way it will change is by people demanding from their representatives accountability. At a minimum the playing field should be leveled. This means those in the plant-based supply chain have the same access to subsidies. #plantbasedrevolution
