🥓Ham-bitious European startups are pioneering next-generation techniques for creating plant-based meat that can finally begin to compete with conventional counterparts in terms of texture and taste. One example of the new approaches being used is fibre-spinning, a technique that ‘spins’ proteins into fibres like those found in the familiar texture of conventional meat. One such startup, based in Germany, is PROJECT EADEN, who recently unveiled their plant-based ham made using fibre spinning.
