Spaghetti All'assassina or "Assassin's Spaghetti" is one of the most peculiar and obscure of my favorite dishes. Originating in Puglia in Southern Italy, it is cooked in the most blasphemous way known to Italians... The spaghetti is fried. There are many reasons for the name, ranging from secret cults to the unconventional way it's cooked. The spaghetti, along with minced garlic, is placed in a pan with olive oil on high flame. Repeated pourings of a broth made of blended tomatoes and equal parts of salted water is done periodically. This is where the genius of the dish shines. The spaghetti boils and fries/chars at the same time - caramelising the tomatoes to release their sweet flavor. I like to balance this with a bit of pickled jalapeños for a spicy angle. The result is a flavorful pasta deeply entangled in a sweet tomato sauce along with the heat and sourness of the chillis. Its one of my go to comfort foods and on the easier side of things to make. All in all a wonderful find of a recipe. Ingredients (1 serving) 170g Spaghetti 1/2 a clove of Garlic 3-4 Blended Tomatoes in equal parts of water 5-7 Pickled Jalapeños 1-3 Pickled Chillies (For Garnish) P. Fusilli..great at catching sauce. Originally made in Southern Italy by wrapping spaghetti around thin rods to dry, this readily available favourite is machine made in the UK. These spiral or corkscrew shaped pasta are shaped perfectly to hold the sauce in which they are served. I enjoy these with either a tomato sauce or spinach & mushroom sauce. Even though pasta remains a comfort food for many, it's kind of expensive when you're in a restaurant. While many devour it quite regularly, it can be super-confusing for a lot of people around the world. I have seen people arguing over 'I don't like spaghetti. I only love macaroni' 🤦♀️ The truth is: They are the same thing. The only difference is in their shapes. A tubular pasta—Macaroni Long, thin pasta—Spaghetti They are cut out from the same flour dough with no difference at all in the ingredients. Yet people will keep telling you that one holds the sauce better while the other doesn't. Despite how your tongue conveys you the flavor profile, they are the same thing. Coming back to the point of expensive pasta dishes in the restaurants: -Pasta dishes are the cash cows for restaurants—Dishes with low costs and high profit margins (So, don't get deceived that you're getting some premium quality ingredients when the price tags are crazy) P.S. What does the word “chirmol” mean, is it sauce or intrigue? Yesterday we had steak for lunch with my wife. We didn't go to any fancy restaurants, instead preferring to get our food to go. We had never shopped there. The place was nice. Although it was small, it was very well arranged and decorated. With well-placed furniture and well-used space. The food was delicious. The meat was soft and well-dressed, the salad had an amazing cilantro dressing (the best thing about lunch, after company), the chirmol was perfect, and the fries were crazy! The word chirmol is synonymous with chilmole, which comes from the Nahuatl chilli 'chile' and molli or mulli 'stew'. In Mexico, it is used to refer to a sauce or stew of chili with tomato. In Guatemala, the use of chirmol has become popular to accompany roast meat, and it can be made with chili or without chili. The curious thing is that the word chirmol has another meaning in Guatemala. It is used to refer to an intrigue, an entanglement or an imbroglio. When a person likes to communicate intrigue in a certain environment, it is said that this person likes chirmol. I like chirmol… … But in the steak. Do you like it?
