Born and raised in Lockhart, Texas, Terry Black passed down generations of barbecue knowledge learned from his experience in the Lockhart BBQ scene. His twin sons Michael and Mark Black bring their very own style of Central Texas BBQ from Lockhart to Austin and Dallas and now to you and your family to enjoy!

Today, we are going Beyond The Smoke to introduce a hardworking and dedicated teammate who smokes some of the best BBQ in Waco, Texas. Meet Jesús Ortiz– a Monterrey, Nuevo Leon, México native, hardworking and passionate individual, and the Head Pitmaster at Terry Black's BBQ Waco. Jesús Ortiz, also known as Chuy, began working with us in February 2024 and brought his deeply rooted love for food and fire right to our smokehouse. Growing up in one of the most "stunning cities, surrounded by mountains and steeped with rich tradition," grilling Carne Asada was fired up at least two to three times a week which helped begin Chuy's passion. As he began to explore his passion further, Chuy was able to gain experience in the industry and learn from many different individuals in the BBQ community about the craft. He even had the opportunity to work at a BBQ joint that was included on Texas Monthly's Top 25 New Joints and Top 50 BBQ list. His previous experience includes traveling, cooking, and serving BBQ at different joints in Texas. His favorite thing about working at Terry Black's is witnessing the incredible scale of 24/7 production, the rhythm of the fires, and offering pit tours to anyone who stops by the smokehouse. Anytime there's an opportunity to share his passion and knowledge, he'll take it! His go-to meal is our Brisket and Beef Ribs, but he could also eat Pork Ribs and Turkey with some Mac and Cheese. When Chuy isn't working hard smoking the best BBQ in Texas, he loves to spend time with his beautiful family and play with fire alongside friends at festivals and events.
