California Prop 12 became the law of the land on Jan 1st. It had stirred concerns across our industry over the last few years, yet here at Roli Roti, we faced it with confidence. I am from a family of butchers, I have a degree in farming, and over two decades as a meat industry entrepreneur. My entire life my commitment to top-notch farming standards has been a constant. The recent changes from Proposition 12 weren't a pivot for us; they were in line with the principles we've upheld since day one. Animal welfare is welfare standards are always on of the first parameters we look into when we create a new product – in fact we are also one of the first companies in partnership with the Better Chicken Commitment. While others navigate compliance, we want our industry colleagues to know that our food trucks, and our packaged goods, including pork hash, carnitas, and kalua pork, have always surpassed regulatory requirements. As the year draws to a close, I can't help but reflect on the incredible journey we've had at Roli Roti. This year has been one for the books!   Our team's dedication has driven unprecedented growth. From refining our broth to elevating our sous vide offerings and fostering strong copacking collaborations, it's been a year of tremendous achievements.   Our trucks are seeing continuous success and we plan on opening more locations in the year to come!   On another note, our recent year end celebration was a memorable highlight. It marked our largest company gathering yet, a testament to our expanding team and shared accomplishments.   To our fantastic team, your hard work and commitment have been instrumental in our success. I'm immensely grateful for your contributions. As we anticipate the new year, I'm excited about the opportunities ahead. It is once again broth season!! Due to the unusually warm fall our potatoes hit a high note. I am proud of the potato dishes we continue to make. But now, as winter approaches, I am excited for more of our customers to be enjoying our fabulous broths. Our broths are far from average—they're crafted from the finest organic ingredients and formulated specifically to contain high amounts of collagen and protein. Some of our customers drink them straight for their health, but they also elevate every dish, from soups to sauces. I started this company with the goal of making the best food I could serve from my truck. My goal is the same—the best product possible for the customer.
