CEO Tomo Takahashi founded JINYA Holdings nearly a decade ago with a goal of creating a modern and approachable take on Japanese cuisine. With multiple concepts (JINYA Ramen Bar, bushi by JINYA, Robata JINYA and JINYA Ramen Express) and over 40 locations in the US and Canada, Takahashi’s dream of providing authentic-yet-accessible ramen, izakaya and regional Japanese fare in local neighborhoods across the world is well underway. Since its first restaurant, Robata JINYA, an authentic izakaya-style experience, opened in the heart of Hollywood in 2010, JINYA Holdings has expanded to include one of the fastest-growing franchises in the US, JINYA Ramen Bar. Known for its slow-cooked approach to ramen, JINYA Ramen Bar’s menu features 14 signature bowls with more than 20 customizable toppings. Its expanding fast-casual spin-off, bushi by JINYA specializes in ramen, hand rolls and karaage (Japanese fried chicken). Featuring chicken, tonkotsu, and vegan broth accompanied by three-day, dry-aged Mazesoba noodles, bushi by JINYA also offers hand rolls with nori that is sourced straight from the Ariake Sea in Japan.

Back in April 2022, we launched our first NextGen Casual Council. The idea was years in the making and meant to capture an intersection in full service that had begun to form in the wake of the pandemic. Essentially, the industry's long-awaited answer to the rise of fast casual emerged in the form of accesible, innovative, and forward-thinking chains that were breaking the mold of what a sit-down restaurant was supposed to look like. Everything from company culture to store design to technology to flexibility in service models, all with experience as the differentiator. The goal, as much as anything, was to provide a forum for these like-minded restaurant leaders to gather and discuss the path forward. We held quarterly meetups to talk through the challenges and solutions. What was awesome about it was I generally just arranged the calls, asked an opening question, and sat back for an hour. And, naturally, this took us into last September's NextGen Restaurant Summit in Atlanta. All said, as the calendar prepares to flip over, it's time to introduce the second iteration of our NextGen Casual Council, and also to announce the Summit will return in September (also in Atlanta) for another wild couple of days.
