Want a healthy and refreshing summer dinner?… this is sure to hit the spot! 🥬☀️ INGREDIENTS: - 2 heads romaine lettuce, halved lengthwise, with core intact - olive oil - fresh lemon - salt and pepper to taste For croutons: - 1 cup cooked & cooled 4Sisters arborio rice (cooked according to pkg. directions) - ½ cup shaved parmesan DIRECTIONS: For the Salad: 1. Preheat grill or a grill pan for the cooktop at medium to medium-high heat. 2. Brush each side of the romaine lettuce with olive oil. 3. Grill each side for 3-5 minutes. 4. Serve drizzled with fresh lemon juice, salt, pepper, & shaved or shredded parmesan cheese, topped with rice croutons. For rice croutons: 1. Preheat air fryer to 375 degrees. 2. With a small melon ball scoop, scoop rice mixture into balls. 3. Place each rice ball on a silicon air fryer insert. 4. Air fry for about 12 minutes until crispy on the edge. Makes about 16 croutons. Rice croutons make a yummy snack too, plain or with your favorite dip. #healthyrecipes #ricerecipe #rice #healthydinner #healthymeal

These pancakes remind us of 3 things: sunshine, good vibes, and good eats! 🥞🍓 INGREDIENTS: - 1 cup cooked, leftover 4Sisters white rice - 1 lg. egg - ¾ cup heavy cream - ¼ cup water - 2/3 cup flour - 1 tsp. baking powder - ¼ tsp. ground cinnamon - 1/8 tsp. salt DIRECTIONS: 1. Mix all ingredients in a mixing bowl, mashing out any big rice lumps. Let mixture rest for 5-10 minutes. 2. Heat griddle to medium high heat. 3. Grease the griddle and add about ½ cup pancake mixture to the hot pan. (Stir mixture before each pancake). 4. When pancake starts to make bubbles (about 2 minutes), flip and cook another few minutes. 5. Pancakes should be nicely browned on each side. 6. Serve with honey or syrup, fruit, nuts, whip topping, etc. Makes about 6 pancakes. #easybreakfast #pancakes #yummybreakfast #rice #ricemeals
