Creamy Golden Mushroom Soup

ingredients
2 tablespoons light margarine
3/4 cup onions, finely chopped
1 pound button mushroom, or any other fresh mushroom
6 ounces all-purpose flour
3 cups fat-free or low-fat milk
1 1/2 cup fat-free half-and-half or evaporated skim milk
1/2 cup sliced mushrooms for garnish
4 quarts broth
herbs of choice (poultry seasoning, thyme, sage, etc.)
directions
Prepare broth according to directions or use ready-made product.
Saute onions in the melted margarine. Stirring constantly, add flour and cook over low-medium heat until product turns light brown.
Add broth, mushrooms, and seasonings. Cook for 15 minutes. Slowly add dairy products, stirring constantly. Let cook over low heat for another 5 minutes, stirring constantly.
