A traditional Scottish raspberry jam, passed down from my Mum.
Take a large bowl / pan. The bigger the better really.
Put a small amount of cold water in the bottom of the pan. About half a centimetre will suffice. This is to stop the bottom of the pan burning during boiling.
Add the raspberries on a low / medium heat. Simmer and stir until the berries have softened. Usually about 10 minutes, but it depends on how many raspberries you have.
Once softened, add the sugar and stir it in.
Bring to the boil, and keep it boiling for about 15 minutes. Do not cover.
To test if ready, take a small amount out on a teaspoon and place on a small plate. After a few seconds of cooling, a film should form on the top, and the jam should not roll around the plate (too much!).
Turn off heat and allow to cool. Stir away all the foam and "scum" on the top until it's completely absorbed.
Then simply pour into pots, or other airtight containers and allow to cool for a few hours.
The proportions are everything. It is basically 4 parts fruit to 3 parts sugar. So adjust your sugar measurements if you have more or less fruit, but the above makes a sizeable amount of jam.
