Coat each chicken piece first with the beaten egg, then with the flour mixture in the bag. Make sure you coat each piece completely with the flour.
Heat the oil in a pressure cooker. Brown the chicken in oil slowly, uncovered.
Once browned, cover the pressure cooker with lid and lock down. Pressure cook at 5lbs of pressure and cook for 6-7 minutes after the rocker starts rocking.
Heat pressure cooker, add oil and brown chicken. Season with salt and pepper.
Close cover securely. Place pressure regulator on vent pipe and COOK 10 MINUTES at 15 pounds pressure. Let pressure drop of its own accord.
Remove chicken from canner and place on cooling rack or paper towels to drain out the excess oil.
