On Monday we launched PLATE, our learning academy for the next generation of hospitality talent in partnership with Westminster Kingsway and Vacherin Chef Consultant, Sabrina Gidda. PLATE, which stands for Performance, Learning and Technical Excellence, is a unique two-year development course that is designed to help support the transition from education into industry. The academy will connect talented young chefs to the contract catering industry, to further nurture skills through masterclasses, strategic stages in restaurants, alongside mentorship and personal development. Plate Academy will provide hands-on experiences across every aspect of our business, showing the length and breadth of possibility within the industry and its value. We’ll help our young chefs create compelling portfolios, learn new skills, build confidence, and help launch them into a rewarding career in hospitality. Coffee is such an integral part of our offer, and often the first thing our customers have at our sites, so it’s essential that it tastes great, is made skillfully, but also ‘does good’. ☕ Well Grounded CIC is an award-winning social enterprise, that helps unemployed individuals learn the skills they need to access sustainable and enriching careers in coffee. We’ve all heard of a pub crawl, but how about a croissant crawl? 🥐 Last Friday Stephen Humphries took a group of Vacherin chefs on a west London pastry crawl to tuck into some of the city’s finest croissants. 👌 First up were the HUGE XXL croissant (feeds up to ten!), pain au chocolat and the pistachio croissant from Philippe Conticini. Then for more butter based goodness the team headed to CEDRIC GROLET The Berkeley for their fabulous pastries. And for the final stop, the team popped to Le Deli Robuchon to try the iconic Robuchon cube. Our Deputy GM and Springboard ambassador Diana Gailiunaite recently became Vacherin’s first, (of many we hope), The Burnt Chef Project ambassadors. This isn’t a quick or easy undertaking, it means committing to become an advocate for them, completing mental health training modules, and undertaking interview style rounds with the charity. Our Head of Food, Alex Rowe, has also become involved with The Burnt Chef Project with Kris Hall MIH and Diana and plans to expand our work with them across our wider Vacherin business.
