FOR THOSE UNAFRAID OF THE DARK… We bring you Erebus™ (formerly HS16660). New from the Hopsteiner Breeding Program is our latest aroma hop variety with notes of blueberry, citrus, candied fruit, and floral rose. True to its name, Erebus™, is a bold disruptor to the world of hops. From Greek mythology Erebus is the shadow deity of darkness and child of Chaos. Erebus™ doesn’t give away its full character with a simple rub. This hop casts a much deeper flavor profile than what might be perceived in its cone form. It’s a veil that lurks in the shadows and only reveals its true splendor in finished beer, promising an experience that’s as captivating as it is unique. The name Erebus™ reflects its experimental origins, but also symbolizes a thrilling disruptor of the ordinary which is why we have so lovingly named this hop variety Erebus™. One for the books! Thank you to all who came out to visit us this season and for making this experience that much more special. We hope you had as much fun as we did this season and cannot wait for 2025! As we hang up our hard hats and park the combines, we just want to take a moment to also thank all the folks who contributed to growing and bringing in this year’s crop. From the time spent in the lab running hop analysis, to hanging twin, to the final hands that pull the core samples from each hop bale for selections, we thank you!

There is a certain kind of peace that falls over the hop fields after harvest. The air is crisp, a light dew coats your boots as you move through the fields, and the only thing you hear is the wind quietly blowing the small remaining twine strings that hang from the trellis. We want to give a big thank you to all the crew, their families, and all who helped make this a great season! More selection images to follow as we head into pelletizing and processing season here at Hopsteiner.

Sharing some time spent with the R&D team today harvesting the latest multi-hill varieties coming up in the breeding program. Because these are small scale (non-commercial) yards, each is harvested by hand and in extremely limited quantities. If you have a small (sub 5 bbl) brewhouse, are able to provide sufficient brewing data, and interest in playing with some truly unique unicorn hops, leave us a message 🍻.

Just look at that cone to leaf ratio 🤩🙌. Our R&D team has truly developed some of the most amazing, disease resistant, high yielding hop varieties grown today. So much so that we have had to reinforce our hop haulers because of all the extra weight from the additional cones! Stronger yields mean more bales per acre, fewer resources used, and better land use efficiency 🌎💚.
