Eataly SoHo
Structure Tone New York completed Eataly Soho, Eataly’s third NYC location, situated on the ground and first floor of a historically landmarked building at 200 Lafayette Street. Spanning nearly 20,000sf and designed with New Yorkers in mind, Eataly Soho sets a new standard for future medium-sized Eataly eateries. The scope for this Italian eatery included construction of a full-service restaurant, specialty marketplace, café, bar, and grab-n-go food counters.
During preconstruction, the team incorporated lessons learned from previous projects and built a schedule and budget that reflected Eataly’s design standards. This was particularly important on this project, as space was tight. Equipment and materials deliveries had to be carefully coordinated so everything fit. There was also a unique sign-off process for this project, based on the percentage of restaurant vs. retail in the space. Our team navigated it smoothly and completed the project about a month ahead of schedule, allowing Eataly Soho to open on December 1, just in time for the busy New York holiday season.
“Eataly SoHo sets a new standard for future mid-sized Eataly locations. Collaborating with Govan Brown and Structure Tone Southwest, our NY team was able to couple their lessons learned with expert schedule, logistics, and quality management to complete this space for Eataly nearly a month early.”—Tom Patterson, account executive, Structure Tone New York
