The growth of cells of a living being is key for an increasing range of applications, including in-vitro drug testing and cellular agriculture. In order to closely mimic the natural environment of such cells in-vitro, highly porous structures with tuneable mechanical and permeability properties are required. Sallea is developing such scaffolds with highly controlled pore size, shape and overall porosity from a broad range of relevant materials.

🥩 Swiss startup sallea is developing 3D plant-based scaffolding that can act as a flexible framework to create whole cuts of cultivated meat and help the industry scale up production and development. Following the recent close of a $2.6 million funding round, the startup said it is currently collaborating with multiple companies to develop a proof-of-concept before bringing their technology to market in the next four to five years. By 2030, around 1% of the global meat market could be covered by cultivated meat. Meat made from cells. Cultured meat. “Obviously, if it grows faster, I think everyone in the ecosystem is happy,” Nicole Kleger, the CTO of sallea said on the new X-Health.show episode. We’re speaking about 1% of around $30B. Is it more about technical challenges or cultural? Aleksandra Jani asks. “It’s absolutely both. On the technical side, the ecosystem could already show that it is possible to grow cells and to create a piece of meat that tastes [good], that we can reach the hygiene standards and the safety standards that it's safe to eat. Now, the whole ecosystem is in a transformation toward scaling up, so to create the volumes that are needed to create a food product and at the price, which is relevant for the market.
