Liz and Shane's Wedding Cake

This was a very special cake to do for Miss E's godmother, my childhood friend, and neighbour that we traveled to Vancouver to do.  And celebrate.  We are staying at the most amazing Airbnb with a dream kitchen.  I swear the island alone is as big as my kitchen!  I brought some supplies with me and was able to buy all the ingredients needed at a Bulk Barn that I was able to find.  I did need to borrow a hand mixer from the owner's parents next door but everything else was already in the kitchen for me to use.   Mr T and I did go on a hunt for a cake stand and finally found one at Winners thankfully!  Nothing like a little stress the day before the wedding.  But it was worth it for what we were able to find which was exactly what I was envisioning.  Ironically, I have three of these cake stands at home. Kristen's Naked Vanilla Celebration Cake

 This cake was to celebrate my cousin's birthday and her new job in New York.  Vanilla cake with salted caramel filling.  The beautiful flowers were added post delivery so my cousin was kind enough to send me a picture of the finished product before they cut into it.  Naked cakes are perfect if you're not a big fan of icing.  I like doing them because you don't have to worry about some crumbs getting mixed into the icing! :)

Chocolate Naked Cake

I was asked to make this cake for Lina's daughter's 23rd birthday.  This is only my 2nd time doing a naked cake.  A naked cake is a cake without a full coating of icing or fondant.  It is  basically a crumb coat.  For this cake I a three layer 8" chocolate cake with chocolate fudge filling.  First, I leveled off the three layers, then piped the white butter cream around the top edge of two layers to form a dam for the chocolate filling.  I let them set in the fridge for about 15 minutes.  Once set I added the chocolate filling and covered in icing.  It was so strange to be done at that point.  I just had to add the flower. The flower is made out of fondant; made a few days in advance starting with darker fuchsia to lighter to give it an ombre affect.  I added a dab of icing underneath to offset it slightly.
