Pam Wattenbarger wants to live in a world where calories don't count and desserts are enjoyed before every meal. As a native Southerner, she's been influenced by home style Southern cooking all her life. When confronted with family members with Celiac disease, dairy allergies, and diabetes, she began recreating the traditional dishes, minus the allergens and the fat, including adjusting to preparing gluten-free dishes that are still full of flavor.

- Reviewed in the United States on April 6, 2021My husband has celiac disease and has been gluten free now for about ten years. This cookbook has a variety of recipes which we needed to add more variety to his meal prep. I really like that the recipes are broken up by seasons which makes a lot of sense but I really hate that there are no pictures. Sometimes you just want to flip through a cookbook in search of inspiration or see what it looks like before making it. The book starts with information on meal prepping and chapter 2 has easier recipes to start with before moving on to the ones in later chapters. The author provides a shopping list and a weekly meal chart. Each recipe includes storage information, thawing and reheating instructions and often tips on ingredients or substitutions. The first chapter starts with four recipes which could be hard for some people to have that as their only weekly meals. If you are looking for more variety the rest of the chapter is broken up by seasonal menus. The shopping lists seem reasonable and full of fresh foods and not frozen or prepared items which is a welcome change from other cookbooks and obviously important where food allergies are a concern.
I love all the tips for making and storing. This cookbook really makes it easy to make ahead meals for the week and/or make meals to put in the freezer. This is so helpful for us since my husband needs meals he can take to work for lunch and not have to worry about contamination with eating out. The recipes are easy to follow with simple steps and instructions. There’s a great variety of recipes so it should work for most everyone since it would be easy to substitute different recipes to make different weekly meal plans. The biggest drawback for us is that about half the weekly recipes call for bacon or sausage which my husband is allergic to. I also wish she had just organized the book by seasons instead of different difficulty levels as it would be easier to find the recipes. A lot of the recipes are broccoli based if that’s not something you would want. There are also recipes at the end of the book without meal prep notes or shopping lists. Overall a great cookbook for gluten free recipes and meal prep. Lots of interesting and varied recipes to stop feeling like you’re missing out or in a rut.
- Reviewed in the United States on January 23, 2021I wanted to be really excited about this cookbook. First off, it is a soft cover, which isn't great. The idea behind the cook book is good. There is a shopping list that prepares you for the week. The problem is that the meals aren't that appetizing. The second issue is that the meals are REALLY repetitive. For instance, I attached a picture of one of the weeks. The 'very berry smoothie' is repeated four days for breakfast and if you are wondering, what is for the fifth day? Nothing! Then, the menu has steak salad for 3 lunches and 1 dinner. And to make it worse, on day 1, you are supposed to have steak salad for lunch AND dinner. So, basically for breakfast, lunch, and dinner, there are 4 unique meals that are repeated so if you don't like to have the same meal over and over again, this is probably not for you. Also, the shopping list only makes enough for 1 meal for 4 people so even though the same meal is repeated 4 times, the shopping list only is enough for 4 individual meals - so either 4 meals for 1 person or 1 meal for 4 people. It is not clear in the shopping list so make sure you are aware that the shopping list only supports 1 person so if you are cooking for a family, be aware. Also, I don't really like the way the book is organized. The book is separated by chapter based on 4, 5, or 6 recipe meal preps and by Spring, Summer, Fall, and Winter menus. I feel like it should be organized differently. There may be a really good recipe in the Winter menu of six recipe prep (page 135) that you may never come across in a different section, like the four recipe prep for winter (page 41). Overall, the book is a let down that we will likely not use.

- Reviewed in the United States on September 16, 2024Great for getting started food prep. I have a big family so this is going to be a big help.
- Reviewed in the United States on March 4, 2021I was surprised by how much I like this cookbook - it's not the expectations I had for gluten-free food, but rather that this approach makes so much sense and it really respects my time.
Consider this: we have to plan to feed 5 mouths 5 dinners a week. Evening is busy, daytime is busy, and the investment of spending 1 to 2 hours a night prepping and cooking a healthy meal with leftovers is one we think its worth it; it's also time we spend competing with homework help, sports practice, meetings planned for way too late in the day, and everything else that comes up.
So why not do all your prep at once on the weekend. There's truly set up and take down time, additional cleaning time, etc. That's the magic of this cookbook - plan and prep once, short cooking the rest of the time.
The meals are good, and they include gluten-free baking. If you're really a strong afficionado for baking you've used the recipes from America's Test Kitchens "I can't believe it's gluten-free" cookbook, these won't feel the same but they're still good. Quick breads are a great snack and supplement, there's no reason not to have some on-hand. The prep guides can be used as shopping lists - the only thing missing is that there's not a QR code to scan to call up instacart so you don't even have to do the shopping.
Brilliant brilliant book with good recipes. I hope the author comes out with a second one.
