At times, we either don't have the time or certain ingredients to make desserts. It's not cheating nor taking shortcuts when using prepared mixes in cooking and baking. Spiced cake mix with applesauce is a great match.

- 18.25 oz spiced cake mix
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 1 large egg
- 1 cup raisins or dried cranberries

Making the Dough

Preheat the oven to 350°F (180°C).

Mix the wet ingredients. In a large bowl, beat the vegetable oil, applesauce, and egg with a stand or hand mixer.Advertisement

Sift the dry ingredients into the wet ingredient bowl. Incorporate the cake mix and raisins/cranberries into the batter.
- For the best results and easier stirring, sift a small amount at a time in between stirring.

Baking the Cookies

Form dough balls. Use a cookie scoop to form 1-inch (2.54 cm) balls and place them on a parchment paper lined baking sheet, about two inches apart from each other.

Bake the cookies for about 9 to 12 minutes.

Allow the cookies to cool. Leave them on the cookie sheet for a few minutes. This is to allow the cookies to actually "set" while still piping hot.

Transfer the cookies to a wire cooling rack. Set aside for about 15 to 20 minutes.
