I have always been a big fan of this scene.

When you shot the target on the flower vase the flower would squirt water at you.

The boats are original to the ride and they were supposed to look like an Indian canoe as they would traverse through Injun Joe's Cave.  When Sally Dark Rides converted the ride into Scooby-Doo the original concept was to add a lantern on a pole at the back of the boat to make it look like a swamp boat.  That concept never made it to reality.

As you pass through The Scary Swamp many of Scooby-Doo's monsters are there to greet you.  I think the only thing that would have made the ride better is a scene where you get to pull the masks off the monsters and have some villain declare "I would have gotten away with it too if it wasn't for you meddling kids" like happens at the conclusion of every Scooby-Doo episode.

With a steady flow of water moving you through The Scary Swamp is what propelled the boats and half the way through the ride is where the lift and pumps to raise the water were.  There was always a ride operator stationed here keeping an eye on the boats and riders.  I bet they had to change that person out often is sitting in the dark I'm sure a few got pretty drowsy throughout the shift.
