Basic Cooking InstructionsBring 2 cups water to a boil. Add teaspoon salt, cup millet and return to a boil. Cover and cook at lower heat setting for 35-40 minutes. Serve as a cereal with milk and honey or as a dinner side dish with melted butter.Keeps best refrigerated or frozen.

It's an employee owned company dedicated to providing fresh, top quality natural food products, a majority of which are whole grains. I only recently began to branch out from a standard Muesli purchase (which I highly recommend for cold or hot cereal lovers...nutritious and delicious (cheesy, but true)) with products like this Millet, Sorghum, Bulgar, etc.
Why I like this product:
1. Bob's Red Mill has a reputation for quality, and this product is no exception. I've never had any 'bad' product; stale, spoiled, containing anything other than the package label product, etc. Just check the seal integrity of a bag by gently squeezing to ensure no air escapes, which would indicate a potentially less than fresh experience. For those that care, the Bob's Red Mill website has a lot of interesting info on products, the company, and more. I appreciate their website as both a web designer and consumer.
2. For products that meet special dietary needs, Gluten-free for instance, they clearly label them as such. They even provide the laboratory testing standards used for quality control, a detail that other manufacturers often overlook. I don't have any specific dietary requirements or restrictions, but details like this speak a lot about the company, and I appreciate them.
3. I love the packaging. Granted not everyone will care to read a short history of where Millet, Farrow, etc. came from, but for the layman cook like me, it's fun and educative. I'll' remember bits and pieces and can tell guests something of interest about many of the things I've made from Bob's Red Mill products.
4. BONUS: The recipes printed on the packaging are actually worth trying! I've rarely made the effort of trying a recipe printed on a package, but in most of Bob's Red Mill suggestions, they're not trying to sell me a dozen other ingredients that they sell to make something. Often, just the product inside the bag a recipe is on is the only ingredient that's needed from Bob's. Other ingredients are things I often already have, which is why I ended up making Sweet Millet Congee from the recipe provided with this product. Bacon, cinnamon, and sweet potato in a favorite meal of Taiwan? Yep, it's delicious.
