After Ashley gets mustard sauce over her dress, Henry clearly dabs his hot-dog on a spot which does not have any sauce, yet when we see the hot-dog before he takes a bite, there is quite a lot of sauce on it.
When the ghost of Kate keeps Ashley up talking about her pets, when the alarm goes off it clearly flashes "6:00" but the radio announcer says it is 7am.
Before Ashley and Henry's first kiss, the position of Ashley's hair changes from shot to shot. When they kiss, Ashley's head changes position between shots.
When Ashley tries (unsuccessfully) to speak German, Henry tells her: "You speak like Swedish German". Of course, they don't speak German in Sweden, but what Henry meant was that Ashley got the accent all wrong (not to mention the words), and sounded more like a Swedish person trying to speak German (without knowing it).
During the opening credits, almost all of the photos taken of Eva Longoria Parker and Paul Rudd are obviously fake (one person's face put into existing photo).
