Queen Bee GF Flour, 'gluten-free gluten' is now a thing!
I use Expandex in my patent-pending gluten/grain free flour for pizza crust. I also use it in some recipes. Expandex is not for all GF recipes. it depends on what texture you are looking for. It can makes some cake and muffin recipes too soft and crumbly, but others really light and airy. A tiny amount makes my chocolate chip cookies spread nicely and very chewy. But not without Queen Bee GF Flours and mixes. Always arrives on time.

Suddenly my son, age 50, could no longer digest wheat flour and gluten free flour, missing gluten, is hard to get to rise, but adding the modified tapioca works much better.

    Did you know it is estimated that 2-6% of the population has allergies to corn??? Tapioca starch is a GOOD alternative because it is extremely rare that people are allergic to tapioca.

    I'm one of those allergic to corn and it is nice to know I can find substitutes like this for cooking. It's somewhat of a substitute for modified corn starch (which is a no-no for people with corn allergies). Because it doesn't require cooking, I use it to thicken fruit sauces, and as an emulsifier for salad dressing.

    I bought this product hesitantly, as I was just getting started with some serious gluten free baking- like I was seriously ready to have some good results! I just wasn't sure if it was worth the cost.
    Let me tell you, I wouldn't be without it. This is the third bag I've bought in the past six months or so. I started with recipes from Nicole Hunn's "Gluten Free on a Shoestring" blog, and have stated adding it to my own adaptations of various gluten-free recipes.
    My favorite things to make with it are pita bread, pizza crust, and tortillas. I know I use it for other things too, but those are staples.
    I only need on average ~35g (1/4 cup or so) per recipe, so the cost is pretty darn reasonable for how many recipes I can get out of it.
