- Abstract: Ethanol and n-hexane were employed to extract hemp seed oil, a potential edible vegetable oil with a rare ideal ratio of ω-6/ω-3 fatty acid (3:1). A Central Composite Design (CCD) 22 was used to investigate the infuence of Temperature (T) and Solvent/Seed Mass Ratio (SSMR) on the hemp seeds oil yield, evaluating the infuence of the time extraction. In the best conditions, the fatty acids and triacylglycerol (TAG) profles, density and dynamic viscosity temperature profles (293.15 to 343.15 K), and the total Carotene and Chlorophyll content were studied. The best T, SSMR and extraction time for n-hexane and ethanol were 343.15 K, 7/1 and 6 h, and 348.15 K, 7/1 and 6 h, respectively, presenting a maximum oil yield of 32.1% (n-hexane) and 17.3% (ethanol). A high degree of unsaturation (>90%) was observed, with a predominance of polyunsaturated fatty acids. The TAG LLL (L–Linoleic acid) was the most abundant with approximately 15% of the total oil composition for both solvents used in the extraction. The ideal ω-6/ω-3 ratio was observed for the extraction with both solvents (3.21 for n-hexane and 3.18 for ethanol). The density and viscosity temperature profle presented similarities with other common vegetable oils. The total chlorophyll content was 61.22 μg/g and 16.12 μg/g for hemp seed oil extracted with ethanol and n-hexane, respectively. Total Carotene content was higher for the oil extracted with ethanol (17.23 µg/g of oil) compared to n-hexane (4.40 µg/g of oil). Hemp seed oil can therefore be an important source of lipids in human foods with properties close to common vegetable oils and good nutritional potential, allowing its use for diferent purposes.
