English: The northern Thai speciality Nam phrik num is a chilli dip made by pounding grilled young green chillies (called "phrik num" in northern Thailand), grilled shallots and grilled garlic in a mortar and pestle, mixing in lime juice, fish sauce and roughly shredded coriander leaves to taste. The dip is eaten with sticky rice (khao niao) and lightly steamed vegetables, certain tree leaves and flowers. The freshly made dip can be bought at almost every market in northern Thailand.
