Jindallaehwajeon (진달래 화전, literally azalea pancake) is a variety of jeon, Korean styled pancakes, made with Rhododendron mucronulatum, glutinous rice flour, and sugar. It is made by pan-frying the kneaded dough on a hot frying pan with vegetable oil. It was traditionally eaten on Samjinnal, which falls on every March 3 in the lunar calendar.
